Shrimp Paste Fried Rice (Kao Kluk Gapi)

Ingredients
100g shallots, 50g palm sugar, 200g pork, 15ml dark soy sauce, 2개 eggs, 100g carrots, 1개 lime, 30g fermented shrimp paste (kapi), 400g cooked rice, 100g cucumber, 20g dried shrimp, 5g chili powder, 30ml oil
Instructions
1. Sauté sliced shallots in a pan until softened.
2. Add palm sugar to the shallots and stir until it melts and caramelizes.
3. Add diced pork and dark soy sauce to the pan. Cook until the pork is tender and coated in the caramel sauce.
4. Remove the caramel pork from the pan and set aside.
5. Cook a thin omelet in a pan. Once cooked, slice it into thin strips.
6. Prepare other toppings: julienned carrots, sliced cucumbers, and dried shrimp. Squeeze lime juice over the carrots.
7. In a wok, heat oil and add fermented shrimp paste (kapi). Stir-fry until fragrant.
8. Add cooked rice to the wok with the shrimp paste. Stir-fry until the rice is evenly coated and heated through.
9. Assemble the dish: place the shrimp paste fried rice on a plate. Arrange the caramel pork, shredded omelet, julienned carrots, sliced cucumbers, dried shrimp, and a lime wedge around the rice.
10. Sprinkle chili powder over the rice for an extra kick.
