1loaf Artisanal bread, 0.5cup Kosher salt, 1teaspoon Baking powder, 1whole Turkey, 12cups Store-bought turkey stock, 2tablespoons Oil, 1handful Fresh thyme, 2leaves Bay leaves, 1set Aromatics (for stock)
Instructions
1. Cut artisanal bread into cubes and spread them evenly on rimmed baking sheets.
2. Bake the bread cubes in a 200-degree oven for about 1.5 to 2 hours until completely dry to make croutons.
3. Remove the giblets and neck from the turkey. Cut out the spine and wishbone to spatchcock the bird.
4. Flatten the spatchcocked turkey by pressing down on the breastbone.
5. Combine kosher salt and baking powder. Liberally but conservatively rub the mixture all over the turkey.
6. Cut the turkey spine and neck into 2-inch segments.
7. Brown the turkey pieces (spine, neck) in a little oil in a pot to add flavor and color to the stock.
8. Add aromatics (e.g., chopped vegetables) to the pot with the browned turkey pieces. Stir to get good color and fond at the bottom.
9. Add fresh thyme and bay leaves to the pot.
10. Cover the ingredients in the pot with 12 cups of store-bought turkey stock and simmer for a couple of hours to fortify the stock.
