Homemade Burger and Fries

Ingredients
4ea potatoes, 500ml peanut oil, 300g short rib, 300g brisket, 300g sirloin, 1ea tomatoes, 0.5ea red onion, 0.5ea iceberg lettuce, 0.5cup ketchup, 0.5cup mayo, 1tsp garlic powder, 1tsp onion powder, 1tsp smoked paprika, 2tbsp sweet relish, 1to taste kosher salt, 1to taste freshly ground pepper, 4ea burger buns, 50g butter, 4ea American cheese
Instructions
1. Peel and slice potatoes into planks and then into French fry shapes, then immediately drop into 375°F peanut oil.
2. Freeze the par-fried fries for at least 4 hours to crystallize their interiors.
3. Prepare the burger meat by removing bones and silver skin from short rib, brisket, and sirloin, then cut into chunks and freeze for 15 to 20 minutes.
4. Slice tomatoes, red onion, and shred iceberg lettuce.
5. Make the special sauce by mixing ketchup, mayo, garlic powder, onion powder, smoked paprika, and sweet relish.
6. Grind the chilled beef through the medium-size grind plate of a meat grinder.
7. Gently press the ground beef into 4.5 to 5 oz patties and chill in the fridge.
8. Reheat oil to 375°F and fry the frozen fries for 4 to 6 minutes until golden brown, then toss with kosher salt.
9. Season the burger patties with kosher salt and freshly ground pepper.
10. Toast burger buns in butter in a pan until golden.
11. Sear the patty in a ripping hot cast iron skillet with vegetable oil over medium-high heat for 3 to 4 minutes, flip, top with American cheese, add a splash of water, and cover to melt.
12. Assemble the burger on a bed of lettuce with tomato, onion, special sauce, and top bun, and serve with fries.
