Stir-fried Shrimp and Eggs

5oz shrimp, 1tsp salt, 0.5tsp white pepper, 1tsp cornstarch, 1stalk green onions, 5pieces eggs, 2tbsp oil, 0.5tsp sugar
Instructions
1. Peel and devein the shrimp. If large, halve them horizontally.
2. Wash the shrimp with water and press out the excess moisture, then dry thoroughly with paper towels.
3. Season the shrimp with salt and white pepper, then mix in cornstarch last to coat.
4. Chop the green onions.
5. Beat the eggs with oil, salt, and sugar until bubbly, then mix in the chopped green onions.
6. Heat wok on high heat until smoking, add oil, and stir-fry the shrimp for about 30 seconds until almost fully cooked, then remove and set aside into the egg mixture.
7. Add more oil to the hot wok, pour in the egg and shrimp mixture, let sit for 10 seconds, then gently fold the cooked edges on top of the raw parts until silky.
