Strawberry Dream

1lb Strawberries, 1heaping spoon White sugar, 0.25cup Lemon juice, 2cups Heavy cream, 0.5tsp Vanilla extract, 0.33cup Strawberry puree
Instructions
1. Prep 1 lb of fresh strawberries by rinsing them and removing the tops (hull). You can use a knife at a 45-degree angle or cut straight across. A huller tool can also be used.
2. Halve the hulled strawberries. Dice about three or four strawberries (or until you have about 2/3 of a cup diced) by cutting lengthwise and then across. Wrap and refrigerate these diced strawberries for later.
3. Quarter the remaining strawberries and add them to a measuring cup. Add one heaping spoon of white sugar over the top and mix it in gently.
4. Let the sugared strawberries sit and macerate for about 1 hour, stirring every 10 to 15 minutes. This process pulls out juices and intensifies the flavor.
5. After macerating, use an immersion blender to blend the strawberries into a smooth puree.
6. Optionally, pass the strawberry puree through a fine mesh strainer to remove seeds and fibrous bits for a smoother, more luxurious final product. Wrap and refrigerate until ready to use.
7. Freshly squeeze a quarter cup of lemon juice. Do not grate the zest for this recipe to avoid an overly lemony flavor, as the goal is to highlight strawberry flavor.
8. In a saucepan, add a little sugar and two cups of heavy cream. Set the heat to medium-high and stir with a whisk until it comes to a boil.
9. Once the cream starts to foam up and rise, whisk it down and lower the heat to somewhere between medium-low and medium. Let it simmer for exactly 5 minutes.
10. Remove the cream mixture from the heat. Add a touch of vanilla extract, the freshly squeezed lemon juice, and exactly 1/3 cup of the prepared strawberry puree. Whisk until everything is incorporated.
11. Let the cream mixture cool for about 10 to 15 minutes.
12. While the cream mixture cools, transfer the rest of the strawberry puree into the bottom of each serving glass (this recipe makes four servings).
13. Once the cream mixture is cooled, transfer it into a measuring cup for easier pouring. Pour the cream mixture into the center of each glass, over the strawberry puree.
