Orange Chicken

Ingredients
900g chicken thighs, 1tbsp kosher salt, 2tsp MSG, 0.5tsp baking soda, 1tbsp Shaoxing cooking wine, 8cloves garlic, 3inch ginger, 2pieces red Fresno or red jalapeño peppers, 2tbsp vegetable oil, 1cup white sugar, 1cup rice vinegar, 0.5cup soy sauce, 3tbsp fish sauce, 0.33cup water, 1pieces orange juice, 2tbsp cornstarch
Instructions
1. Cut chicken thighs into half-inch bite-sized pieces, ensuring uniform size.
2. Marinate the chicken with salt, MSG, baking soda, Shaoxing cooking wine, grated garlic, and grated ginger. Mix thoroughly and let rest in the fridge overnight if possible.
3. Brunoise red jalapeños or Fresno peppers, finely chop ginger, and smash and chop garlic.
4. In a sauce pot with a little oil, lightly sweat the chopped vegetables and a tiny pinch of salt over medium heat for 2 to 3 minutes until softened. Remove and set aside.
5. In the same pot with the heat off, add sugar, rice vinegar, soy sauce, fish sauce, water, MSG, and orange juice. Bring to a boil over medium-high heat and reduce for about 5 minutes.
6. Mix cornstarch and water to create a slurry and whisk into the reducing sauce to thicken.
