Crying Tiger Steak

6cloves garlic, 5g freshly ground black pepper, 30ml soy sauce, 30ml Asian fish sauce, 15ml oyster sauce, 15ml lime juice, 10g sugar, 15ml vegetable oil, 600g New York strip steak, 50g raw rice, 20g tamarind, 2ea shallots, 10g cilantro, 5g dry chili flakes, 10g sambal, 5g brown sugar, 5g white sugar, 15ml water, 1ea cucumber
Instructions
1. Crush garlic and add freshly ground black pepper, soy sauce, Asian fish sauce, oyster sauce, fresh lime juice, sugar, and vegetable oil to a bowl. Whisk to combine for the marinade.
2. Place New York strip steak into the marinade, flip to coat, and poke with a fork to help the marinade penetrate. Spoon extra marinade over the top.
3. Wrap the marinated steak and refrigerate for at least 4 to 6 hours, or preferably overnight.
4. For the 'safe and normal' version, scrape off all marinade from the steak and pat dry with paper towels to get the surface as dry as possible.
5. Let the steak sit on the counter for about 30 minutes to warm up before grilling.
6. Toast raw rice in a pan over medium heat until it's a deep golden brown. Grind the toasted rice in a mortar until it becomes a coarse powder.
7. Combine tamarind, minced shallots, chopped cilantro, spicy dry chili flakes, sambal, Asian fish sauce, fresh lime juice, brown sugar, white sugar, and a small splash of water to make the dipping sauce. Stir in the toasted rice powder.
8. Grill the steak for about 3 minutes per side, giving it a half turn halfway through each side for grill marks. Cook to about medium doneness.
9. Let the grilled steak rest for about 5 minutes before slicing it into thin strips.
10. Fan out the sliced steak on a plate to show the pink meat. Serve with cucumber salad and garnish the dipping sauce with toasted rice powder.
11. For the 'dark and dangerous' version, grill the steak without removing the marinade over high heat for the same amount of time. This will result in a charred surface.
