625g bread flour, 38g sugar, 10g salt, 21g instant yeast, 6tablespoons lard, 321g water
Instructions
1. Combine bread flour, sugar, salt, instant yeast, lard, and tempered water in a mixer. Mix and knead until the dough slaps the bowl and passes the windowpane test.
2. Coat a large bowl with lard, shape the dough into a ball, cover with plastic wrap, and let proof at room temperature for 30 minutes until doubled in size.
3. Degas the dough and portion it into 5 oz balls for individual loaves or 12 oz pieces for long loaves. Elongate and roll into loaves, ensuring the seam is face down on a parchment-lined baking sheet.
4. Cover loosely with plastic wrap and proof for 30 to 45 minutes until inflated and doubled in size.
5. Remove plastic wrap, spray the loaves with water, score lengthwise with a sharp razor blade, and bake at 375 Fahrenheit for about 25 minutes with a small pan of water in the oven for steam.
