Tiramisu

1.5cups espresso or strong coffee, 0.5cup dark rum, 16ounces mascarpone, 0.25cup dark rum, 6개 egg yolks, 0.66cup granulated sugar, 2cups cold heavy cream, 2tsp vanilla, to_taste ladyfingers
Instructions
1. Brew 1.5 cups of espresso or very strong coffee, let it come to room temperature, then pour into a medium bowl. Add 0.5 cup of dark rum and stir. Set aside.
2. In a large bowl, combine 16 ounces of mascarpone with 0.25 cup of dark rum. Whisk or use a hand mixer until nice, creamy, and consistent. Set aside.
3. Create a double boiler by placing a medium bowl over a medium pot with about 2 inches of water. Bring the water to a simmer over medium heat.
4. Separate 6 egg yolks into the bowl for the double boiler. Add 2/3 cup (133g) of granulated sugar to the egg yolks and whisk well.
5. Place the bowl with egg yolks and sugar over the simmering water. Whisk constantly for 5 to 8 minutes until the mixture is a beautiful light color, slightly thickened, and the sugar is dissolved. The temperature should reach 160°F to be food safe.
6. Remove the egg yolk mixture from the heat and pour it into the mascarpone mixture. Incorporate them together using a hand mixer until beautifully combined. Scrape down the bowl to ensure everything is mixed.
7. Cover the mascarpone-egg yolk mixture and refrigerate for about 15 minutes while preparing the whipped cream.
8. In the bowl of a stand mixer fitted with a whisk (or a large bowl with a hand mixer), combine 2 cups of cold heavy cream and 2 teaspoons of vanilla. Mix on low, gradually increasing to high, until beautiful soft peaks form.
9. After 15 minutes, fold the whipped cream into the mascarpone mixture until no streaks remain. Use a spatula to skirt the bottom of the bowl, bring it up, and cut through the middle, turning the bowl as you go. A whisk can be used towards the end to bring it together.
