Oven Pulled Pork

Ingredients
4.5kg Pork shoulder (bone-in), 100g Spice mixture (brown sugar, kosher salt, black pepper, paprika, cayenne pepper, cumin, coriander, fennel seed, Mexican oregano), 15ml Oil, 60ml Whiskey
Instructions
1. Rub the pork shoulder generously with the spice mixture, ensuring it gets into all cracks and crevices.
2. Preheat a Dutch oven over low heat, then turn up to high heat and add a little oil.
3. Sear the pork shoulder on all sides until browned, about 5-10 minutes total, as the sugar in the rub speeds up browning.
4. Add a little whiskey to the Dutch oven and optionally light it on fire to burn off the alcohol.
5. Cover the Dutch oven and place it in a 300-degree Fahrenheit (150-degree Celsius) oven. Cook for approximately 5 hours or until a skewer can be inserted with little resistance and the meat pulls away from the bone.
6. Remove the lid and continue cooking uncovered for another 45 minutes to an hour to develop a crust (bark).
7. Remove the bone, then roughly shred the pork and mix it into its juices. Let it cool submerged in the liquid to prevent drying out.
