Braised Chicken Thighs with Star Anise and Vinegar

4ea chicken leg quarters, 1to taste salt, 1to taste vegetable oil, 1cup shallots, 1tbsp ginger, 2ea star anise, 1ea cinnamon, 1ea chile, 1통 garlic, 1cup mushrooms, 0.5cup raisins, 1tbsp sugar, 0.5cup vinegar, 1cup chicken stock, 2tbsp soy sauce
Instructions
1. Season the chicken quarters liberally with salt.
2. In a Dutch oven with vegetable oil, sear the chicken quarters until the skin is brown, then remove them.
3. Lower the heat and add shallots, ginger, star anise, cinnamon, chile, and garlic to the pot, sautéing until fragrant.
4. Add mushrooms, raisins, and sugar, stirring to combine.
5. Pour in vinegar, chicken stock, and soy sauce.
6. Return the chicken to the pot, nestling them in the liquid without completely covering the skin.
7. Cover and braise for 60 to 70 minutes.
8. Remove the chicken and place in the broiler for 5 minutes to crisp up the skin.
9. Plate the braised chicken, spoon the rich sauce over it, and garnish with chopped chives.
