Chinese Red Braised Pork Belly

Ingredients
1.5pounds skin on pork belly, 6stalks scallions, 5cloves garlic, 5slices ginger, 1stick cinnamon stick, 3leaves bay leaves, 0.25cup sugar, 3tbsp Chinese cooking wine, 3tbsp soy sauce, 2tsp dark soy sauce, 1tbsp Sichuan Dou Ban Jiang, 1tbsp oyster sauce, 1cup water
Instructions
1. Slice the skin-on pork belly into log strips, then cut into bite-sized pieces about the size of your thumb.
2. Place the pork belly into the rice cooker along with 6 scallions, 5 cloves of garlic, 5 slices of ginger, 1 stick of cinnamon, and 3 bay leaves. (Cinnamon and bay leaves are optional).
3. Season with ¼ cup of sugar, 3 tbsp of Chinese cooking wine, 3 tbsp of soy sauce, 2 tsp of dark soy sauce, and optionally 1 tbsp of Sichuan Dou Ban Jiang (or 1 tbsp of oyster sauce if you don't eat spicy food).
4. Pour in 1-2 cups of water and mix well. Ensure the liquid level is slightly below the ingredients to prevent the sauce from taking too long to reduce.
5. Press the cook button and let it cook for 1.5 to 2.5 hours. You may need to restart the rice cooker if its maximum setting is shorter.
6. Once cooked, remove the soggy scallions, ginger slices, cinnamon stick, and bay leaves.
7. Serve the tender, flavorful pork with the rich, glossy sauce, ideally over white rice.
