Honey-Glazed Pork Shoulder

3tablespoons kosher salt, 3tablespoons light brown sugar, 6pounds bone-in pork shoulder, 0.5cup honey, 1.5tablespoons soy sauce, 2teaspoons red wine vinegar, 0.75teaspoon red pepper flakes, 0.25teaspoon five-spice powder
Instructions
1. Combine kosher salt and light brown sugar in a bowl to make the dry rub.
2. Score the fat cap of the bone-in pork shoulder with a 1-inch crosshatch pattern, cutting about a quarter-inch deep.
3. Line the counter with plastic wrap, place the pork on top, and rub all over with the sugar and salt mixture. Wrap tightly and refrigerate for 24 hours.
4. Remove plastic wrap, transfer the pork to a wire rack set inside a foil-lined baking sheet, and cover tightly with aluminum foil.
5. Bake in a 325 degree oven covered with foil for the first 2 hours, then remove foil and continue roasting for about 3 more hours until internal temperature reaches 180 degrees.
6. Whisk together honey, soy sauce, red wine vinegar, red pepper flakes, and five-spice powder to make the glaze.
7. Brush a quarter cup of the glaze heavily onto the pork shoulder.
8. Return to the oven for another 30 to 45 minutes until internal temperature reaches 190 degrees and the honey is caramelized.
9. Remove from the oven and let the pork rest uncovered for 1 hour.
10. Remove the bone from the pork shoulder.
11. Brush with a couple more tablespoons of glaze before slicing into half-inch thick slices.
12. Drizzle with the remaining honey glaze before serving.
