Orange Chicken

2oranges Orange Zest, 1cup Orange Juice, 3tablespoons Soy Sauce, 1teaspoon Sesame Oil, 0.5cup Sugar, 0.25cup Rice Vinegar, 0.5teaspoon Red Chili Flakes, 0.5teaspoon Garlic Powder, 0.5teaspoon Ginger, 1.25cups Cornstarch, 4breasts Boneless Skinless Chicken Breasts, 2eggs Eggs, 1inch Oil for frying, 0.5cup Flour, 1bunch Green Onions
Instructions
1. Zest two oranges and extract one cup of fresh orange juice.
2. In a measuring cup, combine the orange juice, orange zest, soy sauce, sesame oil, sugar, rice vinegar, red chili flakes, garlic powder, and ground ginger. Whisk together and set aside.
3. Make a cornstarch slurry by mixing 1 tablespoon of cornstarch with 2 tablespoons of water or orange juice in a small bowl.
4. Cut four boneless, skinless chicken breasts into bite-sized pieces.
5. Whisk two eggs in a medium bowl, then add the chopped chicken and mix until well immersed.
6. In another bowl, mix 1/2 cup of flour, 1/2 cup of cornstarch, salt, and pepper.
7. Heat an inch of oil in a large pan over medium-high heat. Dredge the chicken pieces in the flour and cornstarch mixture in batches.
8. Carefully fry the chicken in batches until golden and crispy (a couple of minutes per side). Transfer to a wire rack or paper towels.
9. In a separate skillet over medium-high heat, bring the orange sauce to a boil. Add the remaining orange zest and the cornstarch slurry. Stir and cook until thickened.
10. Add the fried chicken to the skillet with the orange sauce and toss until completely coated.
11. Sprinkle with chopped green onions, give one final mix, and serve.
