Gai Lan

Ingredients
300g Gai Lan (Chinese broccoli), 1inch ginger, 1.5teaspoon water, 1tablespoon fish sauce, 0.5tablespoon soy sauce, 0.5teaspoon sugar, 2tablespoon oil, 1tablespoon minced garlic, 1teaspoon cornstarch
Instructions
1. Grate 1 inch of ginger and add 1 and 1/2 teaspoon of water. Squeeze to get the ginger juice.
2. Add 1 tablespoon of fish sauce, half tablespoon of soy sauce, and half teaspoon of sugar to the ginger juice to create the seasoning mixture.
3. Prepare the Gai Lan by discarding the end. Slice the stem at a 45° angle into bite-sized pieces and chop the leaves into smaller pieces.
4. Preheat the wok and add oil. Sauté the Gai Lan stems over medium heat for 2 minutes.
5. Add the leafy part of the Gai Lan and stir until wilted.
6. Add minced garlic and pour in the seasoning mixture.
7. Drizzle in some cornstarch water to thicken the seasonings.
