Homemade Honey Marshmallows

0.5cup sugar, 0.5cup water, 0.25cup honey, 0.25envelope unflavored gelatin, 1drop vanilla extract
Instructions
1. Grease a square vessel and coat the bottom and sides thoroughly with powdered sugar.
2. In a saucepan, combine 1/2 cup of sugar, 1/4 cup of water, and 1/4 cup of honey. Heat on high to the soft ball stage (about 240F / 115C).
3. In a mixing bowl, mix 1/4 ounce envelope of unflavored gelatin with 1/4 cup of water and let it hydrate.
4. Drizzle the hot syrup into your bloomed gelatin while beating it with an electric hand mixer until fluffy, white, and cool enough to touch, then mix in vanilla extract.
5. Pour the marshmallow mixture into your powdered pan, smooth out the layer, and let it dry out overnight in the fridge.
6. Dust with powdered sugar, peel out of the pan, cut into strips and squares, and coat thoroughly in sugar.
