Chicken and Broccoli Stir Fry

11ounces Chicken Breast, 1tbsp Soy Sauce, 1tbsp Water, 0.5unit Egg White, 2tbsp Corn Starch, 0.5tsp White Pepper, 1tbsp Oyster Sauce, 1tbsp Brown Sugar, 1tsp Ginger, 1tsp Garlic, 0.5cups Chicken Stock, 1tsp Dark Soy Sauce, 1head Broccoli, 1unit Carrot, 2tbsp Cooking Oil
Instructions
1. Cut chicken breast in half and slice at an angle.
2. Marinate chicken with soy sauce, water, egg white, and corn starch. Massage for 5 minutes and let sit for 20 minutes.
3. Make sauce by mixing corn starch, white pepper, soy sauce, oyster sauce, brown sugar, ginger, garlic, chicken stock, and dark soy sauce.
4. Cut broccoli into bite-size pieces and slice carrots thinly.
5. Toast broccoli and carrots in a hot pan without oil until they get roasted color, then set aside.
6. Heat oil in wok, add marinated chicken, and pan fry until both sides are nice and golden brown.
7. Add roasted broccoli and carrots back to the wok, pour in the sauce, and toss until everything is coated and the sauce is slightly thick.
