Shrimp Toast

Ingredients
300g raw shrimp, 1can water chestnuts, 1tbsp cilantro, 2stalks green onions, 1clove garlic, 1tsp ginger root, 1fillet anchovy fillet, 1tsp toasted sesame oil, 1tsp asian fish sauce, 1tsp soy sauce, 1egg egg white, 1pinch sugar, 1pinch paprika, 1shake cayenne, 1pinch salt, 4slices white bread, 1cup vegetable oil
Instructions
1. Peel raw shrimp if needed, making sure tails are removed.
2. Roughly chop the shrimp, water chestnuts, cilantro, green onions, garlic, ginger, and anchovy fillet before adding to the food processor.
3. Add toasted sesame oil, fish sauce, soy sauce, egg white, sugar, paprika, cayenne, and a tiny pinch of salt into the food processor.
4. Pulse on and off to start blending, stop to scrape down the sides with a spatula, and continue processing until it forms a shrimp paste.
5. Lightly toast the white bread slices first, then trim off the crusts.
6. Spread the shrimp paste evenly onto the toast to a thickness matching the bread, then cut into triangles.
7. Heat about a half inch of vegetable oil over medium-high heat and fry the shrimp toast paste side down until golden brown and crispy, about two to three minutes per side.
8. Drain on paper towels, garnish with extra green onion, and serve warm.
