Twice Cooked Pork

1head spring cabbage, 2pieces red and green bell peppers, 4pieces shiitake mushroom, 1stalk long green onion, 1tablespoon sweet bean sauce, 1teaspoon sugar, 1tablespoon sake, 1teaspoon soy sauce, 1clove garlic, 1tablespoon potato starch, 200g pork belly slices, 1tablespoon vegetable oil, 1piece ginger root, 1teaspoon doubanjiang, 1teaspoon douchi, 1teaspoon sesame oil
Instructions
1. Detach the firm stalk from the cabbage leaves. Cut the leaves into bite-size pieces and thinly slice the stalk using diagonal cuts.
2. Remove the seeds and stem ends from the red and green bell peppers, then cut them into long bite-size pieces.
3. Trim the stem end of the shiitake mushroom and detach the stem. Cut the cap into relatively thick slices and thinly slice the stem.
4. Slice the white part of the long green onion into 5 mm slices diagonally.
5. In a bowl, combine the sweet bean sauce, sugar, sake, soy sauce, grated garlic, and potato starch. Stir to combine thoroughly.
6. Line up the pork belly slices on a tray, and dust both sides with potato starch.
7. Add vegetable oil to a pan, arrange the pork belly slices, and cook both sides until lightly browned. Remove the pork onto a tray.
8. Clean the pan, add vegetable oil, chopped ginger root, doubanjiang, chili bean paste, and chopped douchi. Stir-fry on low heat.
9. When the aroma grows stronger, add the long green onion, bell peppers, and shiitake mushroom. Turn heat to medium and stir-fry.
10. When the bell pepper softens, add the spring cabbage leaves and continue to stir-fry.
11. Pour over sake or water to help cook the vegetables quickly with hot steam, occasionally turning the ingredients over.
12. When all the vegetables soften, add the cooked pork slices and turn off the burner.
13. Stir the combined seasoning and pour in the sauce. Turn on the burner again and coat the vegetables evenly on medium heat.
14. When the sauce is thoroughly thickened, drizzle on the sesame oil, distribute, and place onto a plate.
