Puerto Rican Style Steak Sandwich

300g New York strip steak, 50ml red mojo sauce, 1ea white onion, 1ea red pepper, 2ea soft white roll, 20ml olive oil, 10g cilantro, 20g scallions, 5g seasoning
Instructions
1. Take the fat cap off the New York strip steak, lightly season it, and let it sit in the red mojo marinade.
2. Place the marinated steak onto a hot grill pan and cook.
3. Slice the white onions and red peppers thinly with the skins on. Sauté them in a pan with a touch of olive oil until sweet and caramelized.
4. Turn the steak and generously baste with red mojo sauce. Repeat basting on the next turn.
5. Lightly olive oil the soft white rolls and grill them until toasted.
6. Chop cilantro and scallions finely, then mix them into the caramelized peppers and onions with a touch of seasoning.
7. Check steak temperature to ensure medium rare, slice on the bias, and assemble the sandwich by spooning the pepper and onion mixture generously over the steak inside the toasted roll.
