2.5cups flour, 1cup cold butter, 1tsp salt, 4tbsp ice water, 3.5pounds apples, 0.5cup brown sugar, 0.25cup granulated sugar, 1tsp cinnamon, 0.5tsp ginger, 0.5tsp nutmeg, 0.25tsp ground cloves, 3tbsp cornstarch, 1whole lemon, 2tbsp heavy cream
Instructions
1. Make pie dough by mixing flour, cold cubed butter, and salt together, breaking the butter into flakes, then gradually adding ice water until the dough holds together.
2. Refrigerate the pie dough wrapped in plastic wrap for at least 1 hour and up to 2 days.
3. Peel and slice apples into quarter-inch slices.
4. Precook the apple filling in a pot with butter, sugar, and spices until tender, then stir in cornstarch, lemon zest, and lemon juice.
5. Roll out the bottom and top pie crusts, assemble the pie with the cooled filling, trim and crimp the edges, brush with cream, top with sugar, and cut vents.
6. Bake the pie on a preheated metal baking sheet at 425 degrees for 20 minutes, then reduce heat to 375 degrees and bake for another 30 to 40 minutes.
