Ingredients: large eggs, sugar, salt, all-purpose flour, milk · 40 min cook time · 320kcal · $12.50
Ingredients
4ea large eggs, 3tbsp sugar, 1pinch salt, 3tbsp all-purpose flour, 2cups milk, 1tsp vanilla extract, 1tbsp banana liqueur, 1tbsp butter, 4ea ripe bananas, 1tsp lemon juice, 1box vanilla wafer cookies, 1pinch cream of tartar
Instructions
1. Separate four large eggs with our whites going into a mixing bowl and our yolks going into a saucepan, being careful not to get any yolk into the white.
2. Add sugar, salt, and all-purpose flour to the yolks, then pour in about a quarter of the milk and mix smooth before pouring in the rest.
3. Place the mixture over medium heat, stirring occasionally until it thickens up significantly.
4. Remove from heat and mix in vanilla extract, banana liqueur, and a chunk of cold butter until the butter disappears.
5. Peel and slice ripe bananas into quarter-inch slices, then toss with a little freshly squeezed lemon juice to prevent discoloration.
6. Assemble the dessert in a baking dish by layering pudding, vanilla wafers, and banana slices, repeating the layers and ending with pudding on top.
7. Make the meringue by whipping egg whites with cream of tartar on high speed, gradually adding sugar until gorgeous fairly well-defined peaks form.
8. Spread the meringue over the pudding all the way to the edges, roughening the surface with a knife or spatula to create ridges for browning.
9. Bake in the center of a 400 degree oven for about seven to ten minutes until the meringue is beautifully browned.
