Pa Tong Go (Thai Donuts)

2cups all-purpose flour, 2tablespoons corn starch, 0.75cups water, 1tablespoon sugar, 1teaspoon salt, 1teaspoon ammonium carbonate (baker's ammonia), 2cups oil
Instructions
1. Sift corn starch and whisk together with all-purpose flour in a bowl.
2. In water, dissolve sugar, salt, ammonium carbonate, and add a couple teaspoons of oil.
3. Mix the liquid into the dry ingredients just until combined without kneading to avoid gluten development.
4. Cover the dough and let it rest for at least two and a half to three hours.
5. Turn out dough onto a heavily floured surface, pat down into a rectangle about a quarter-inch thick, and cut into strips.
6. Brush a line of water on every other dough piece, place a dry piece on top, and press gently to stick them together in pairs.
7. Heat oil to 375°F. Stretch each piece to double its length just before dropping into the hot oil.
8. Fry for 5 to 6 minutes, flipping often until golden brown and puffy, then drain on paper towels.
