Peaches and Cream

4pieces peaches, 2parts sugar, 1part water, 1cup heavy cream
Instructions
1. Find the crease in the peach skin, cut in until the knife hits the pit, and cut all the way around. Twist the peach to separate the halves and remove the pit.
2. Peel off the skin and slice the peaches into thick pieces, then cut the slices in half for bite-sized pieces.
3. Combine two parts sugar with one part cold water in a saucepan over medium-high heat. Bring to a boil and cook for three minutes.
4. Carefully transfer the peach slices into the boiling syrup, leave on the heat for one more minute or until it bubbles again, then remove and cool.
5. Transfer some peaches into a serving glass using a slotted spoon, and add an equal amount of pure, cold, un-cooked heavy cream.
6. Wrap and refrigerate the peaches and cream for a few hours to chill thoroughly and absorb the peach flavors before serving.
