Prison-Style Meatloaf

2tbsp butter, 1tbsp olive oil, 1large yellow onion, to taste salt, 4cloves garlic, 2cups white breadcrumbs, 1cup milk, 2lbs ground beef, to taste black pepper, pinch cayenne pepper, 2large eggs, 0.5cup Italian parsley, 1cup Parmesan cheese, 2cups tomato sauce
Instructions
1. Melt butter and olive oil in a sauté pan over medium-high heat. Add diced onions and a big pinch of salt, and sauté until golden brown.
2. Add minced garlic to the onions, stir to combine, then turn off the heat and let it cool to room temperature.
3. In a bowl, combine white breadcrumbs and milk. Mix well and let sit for about 15 to 20 minutes until the breadcrumbs absorb all the milk.
4. In a large bowl, combine ground beef, salt, black pepper, cayenne, beaten eggs, chopped parsley, grated Parmesan cheese, cooled onion mixture, and soaked breadcrumbs. Mix thoroughly.
5. Transfer the meat mixture into a lightly greased baking dish and form it into a classic loaf shape.
6. Pour tomato sauce around and over the top of the meatloaf.
7. Bake in a preheated oven at 325 degrees F for about 1 hour and 10 minutes, or until the internal temperature reaches 155 degrees F.
8. Let the meatloaf rest for at least 10 minutes before slicing and serving.
