Aji Fry

Ingredients
1piece Fresh Aji, horse mackerel, cut into 3 pieces, 1pinch Salt, 1pinch Pepper, 1tbsp Cake Flour or All Purpose Flour, 1tbsp Water, 1tsp Mayonnaise, 50g Panko, Japanese breadcrumbs, 500ml Frying oil, 0.5piece Lemon, 2leaves Cabbage leaves, 2pieces Cherry tomatoes, 1tbsp Japanese Worcestershire sauce
Instructions
1. Remove rib bones from the filleted horse mackerel. Pinch a bone with fish tweezers and pull it towards the head. Carefully remove the bones one by one while feeling their positions with your fingertips.
2. Lightly sprinkle salt on the mackerel fillets and let them sit for about 15 minutes.
3. Thoroughly remove any excess moisture from the surface of the fillets with a paper towel. This will remove the fishy taste and enhance its deliciousness.
4. Sprinkle pepper on the fillets.
5. Prepare the batter by combining flour with water and mayonnaise, and mix well.
6. Dip the horse mackerel in the batter, making sure it is thoroughly coated. Remove any excess batter.
7. Place the fillet on top of panko (Japanese breadcrumbs) and coat both sides thoroughly with breadcrumbs. Repeat for the other piece.
8. Deep-fry the fillets. Stir the frying oil to even out the heat and check the temperature. Remove any excess breadcrumbs and carefully place the fillet into the oil with the meat side facing down. Add the other piece as well.
9. As the temperature drops, turn up the heat slightly. Occasionally shake the pot gently to prevent the fillets from sticking to the bottom and darkening in color.
10. Once the edges become golden brown, lift the fillet gently to check the color on the other side. If it is nicely browned, flip it over. Adjust the heat frequently.
11. Once both sides have a delicious golden brown color, remove the fillet and drain off the oil over the pot. Then, let the Aji Fry stand upright in a mesh strainer to thoroughly remove the excess oil. Repeat for the other piece.
12. Arrange the Aji Fry with your preferred fresh vegetables, such as cabbage leaves and cherry tomatoes. Squeeze plenty of lemon juice over it and enjoy. You can also add Japanese Worcestershire sauce to your liking.
