Fish Curry

Ingredients
400gm Rohu fish, 2large onion, 2medium tomato, 3tbsp ginger garlic paste, handful coriander leaves, 50gm cooking oil, 0.5tsp cumin seeds, 1tsp turmeric powder, 1.25tsp red chilli powder, 0.5tsp coriander powder, 0.5tsp cumin powder, 0.5tsp garam masala powder, 2tsp salt, 1tbsp lemon juice, 300ml water
Instructions
1. Marinate fish with lemon juice, 1 tbsp ginger garlic paste, 1/4 tsp red chilli powder, 1/4 tsp turmeric powder, and 1/2 tsp salt. Mix well and let it rest for 30 minutes.
2. Heat oil in a pan, add the marinated fish pieces, and fry on medium-high heat for 2-3 minutes on each side until golden. Remove and keep aside.
3. In the same pan with remaining oil, add cumin seeds and let them sizzle.
4. Add chopped onions and sauté for 2-3 minutes until translucent.
5. Add remaining ginger garlic paste and cook for 2 minutes.
6. Add turmeric powder, red chilli powder, coriander powder, and cumin powder. Mix and cook spices on low heat for 2-3 minutes.
7. Add grated tomato paste, mix well, cover, and cook on low-medium heat for 6-8 minutes until oil separates.
8. Add water and salt, increase heat to high, and bring to a boil.
9. Add fried fish into the boiling gravy, cover, and simmer on medium heat for 3-4 minutes.
10. Sprinkle garam masala powder, turn off the heat, cover and rest for 2 minutes.
11. Garnish with chopped coriander leaves and serve hot with plain steam rice.
