Deep Fried Oysters

300g oysters, 50g cornstarch, 100g flour, 5g baking powder, 5g garlic salt, 2g white pepper powder, 15ml fish sauce, 100ml water, 200g cabbage, 500ml oil
Instructions
1. Wash the oysters by sprinkling cornstarch over them, then adding water to rinse them a few times. Set them aside to drain.
2. For the batter, combine flour, cornstarch, baking powder, garlic salt, white pepper powder, and fish sauce. Add water a bit at a time until the consistency is perfect.
3. Cut cabbage into strips and place on a plate to be a bed for the oysters.
4. While the oil heats up in the wok, coat the oysters in batter. Add them to the oil when it reaches 330°F. Fry until golden brown or about 1 minute.
5. Take out the oysters and heat up the oil to 390°F. Add the oysters again for a second fry, this time only for 20 to 30 seconds.
6. Plate the oysters on top of the shredded cabbage and serve as is or with your preferred sauce.
