Homemade Fish Balls

8oz fish, 2oz shrimp, 0.5tsp white pepper, 1tsp chicken bouillon, 1tsp salt, 1tsp sugar, 3tbsp cornstarch, 1to taste egg, 5tbsp water, 4pieces cilantro, 4pieces green onion, 1bit dried orange peel, 3slices ginger, 1tsp sesame oil, 1tsp olive oil
Instructions
1. Mince the fish and use the side of the knife to beat the fish into a fine paste. Fold it back and forth and repeat mincing and beating.
2. Cut the shrimp in half, remove the innards, and then mince and beat the shrimp just like the fish.
3. Mix the fish and shrimp together, and continue to flatten with the side of the chef's knife.
4. Mix in cilantro and green onion, a little bit of dried orange peel, and a few slices of ginger.
5. In an empty bowl, add white pepper, chicken bouillon, salt, sugar, cornstarch, egg, and water. Mix it all together for about a minute.
6. Add the fish paste mixture to the bowl, add sesame oil and olive oil, and mix vigorously to make the paste strong and pliable.
7. Put the fish paste in the refrigerator for at least 30 minutes before using.
