Bolognese Ragout

splash extra virgin olive oil, 1piece onion, 1piece carrot, 1stalk celery, 1glass red wine, 500g mince, pinch salt, pinch pepper, 1bottle Italian passata, 1tube tomato paste, 1can peeled tomato, splash hot water, 400g pasta, 1cup milk
Instructions
1. Start with extra virgin olive oil and add onion, carrot, and celery.
2. Add half a glass of red wine, then the minced meat. Season with a little bit of salt and pepper. Cook until the sauce and water are gone.
3. Add the second half of the glass of wine, Italian passata, tomato paste, and peeled tomato. Leave the ragout to simmer for about 4 hours.
4. If the Bolognese gets a little dry during cooking, add a little bit of hot water.
5. Boil water on the stove with a handful of salt and add the pasta.
6. Add a cup of milk to the ready Bolognese sauce and put it back on the stove for another 5 minutes.
7. Add the pasta to the frying pan with sauce at the bottom, add some cooking water, and mix in some more Bolognese.
8. Back to the stove briefly, then ready to be served.
