Salt Crusted Beef Tenderloin

Instructions
1. Start with one clove of crushed garlic, add freshly ground black pepper, and one egg white, then whisk together to create the adhesive.
2. Take a brush and paint the egg white adhesive all over the trimmed beef tenderloin roast, covering top, bottom, and sides thoroughly.
3. Cover the bottom of your baking dish with about a quarter inch of coarse sea salt, place the meat in, roll it around, and coat all sides and ends with more salt pressed in.
4. Let the salt-encrusted beef sit out at room temperature for 30 minutes to warm up slightly and let the crust dry and set.
5. Insert a probe thermometer into the center of the meat, avoiding touching the edge of the dish, and transfer to a preheated 475 degree oven.
6. Remove the tenderloin from the oven once target temperature is reached, and let it rest for at least 15 minutes before cracking open the salt crust and slicing.
