Honey Glazed Ham

2kg gammon, to taste water, 1to taste leeks, 1to taste onion, 1handful peppercorns, 1pinch coriander seeds, 2to taste cinnamon sticks, 4to taste bay leaves, 4tablespoons Demerara sugar, 4tablespoons Madeira, 2tablespoons sherry vinegar, 3tablespoons honey, 1handful cloves
Instructions
1. Place gammon in a pan and cover completely with water.
2. Add leeks, onion, peppercorns, coriander seeds, cinnamon sticks, and bay leaves to the pan.
3. Bring to a boil, then turn down, let it simmer, and skim it. Simmer for two and a half hours.
4. Make the glaze by combining Demerara sugar, Madeira, sherry vinegar, and honey in a pan. Bring to a boil and cook out for three or four minutes.
5. Remove gammon from water, remove string and skin, score in a crisscross pattern, and stud with cloves.
6. Cover with half the glaze, starting in the middle and working round.
7. Bake in the oven for 15 minutes, then add the rest of the glaze and continue to baste and roast at 190 degrees for 35 minutes.
