Maggi Chicken Wings

1000g Chicken wings, 30ml Maggi seasoning, 15ml Fish sauce, 50g All-purpose flour, 15ml Oil, 15g Garlic, 5g White peppercorns, 10g Cilantro stems, 30ml Oyster sauce, 50ml Water, 40g Palm sugar
Instructions
1. Marinate the chicken wings: In a flat wide dish, combine chicken wings with Maggi seasoning and fish sauce. Toss well for about a minute until the liquid is absorbed and evenly distributed. Let marinate for at least 20 minutes, or overnight.
2. Prepare wings for air frying: Sift half of the all-purpose flour over the marinated wings and toss. Sift in the remaining flour and toss again until the wings have a light, tacky flour coating.
3. Air fry the wings: Brush or spray the air fryer rack with oil. Place the wings thick skin side up, ensuring they are not touching too much (cook in batches if necessary). Lightly brush the top of the wings with oil. Air fry at 400°F (200°C) for 10-12 minutes.
4. Prepare the sauce paste: While wings are cooking, pound garlic, white peppercorns, and chopped cilantro stems into a fine paste using a mortar and pestle (or other tools). This is called 'saam kler' or 'three friends'.
5. Prepare liquid sauce mixture: In a separate bowl, mix Maggi seasoning, oyster sauce, and water. Stir to loosen the oyster sauce.
6. Chop palm sugar and have all sauce ingredients ready.
7. Cook the sauce: In a wok or large pan, add a little oil and the 'three friends' paste. Sauté on medium heat for a few minutes until it starts to turn golden around the edges. Do not let it brown.
8. Add liquid sauce and palm sugar: Add the liquid sauce mixture and chopped palm sugar to the wok. Let the sauce boil for about a minute until the sugar is completely dissolved and the sauce has reduced slightly. Turn off the heat and leave the sauce in the wok.
9. Toss wings in sauce: Once all batches of wings are cooked, add them to the wok with the sauce and toss to coat evenly.
