Mississippi Mud Pie

15crackers graham crackers, to taste chocolate, to taste butter, to taste dark brown sugar, to taste dutch process cocoa powder, 0.75teaspoons salt, to taste vanilla extract, 7whole eggs, to taste sugar, 0.25cups flour, to taste milk, 1.5cups heavy cream
Instructions
1. Throw 15 graham crackers into your food processor and pulse to get fine crumbs.
2. Put the crumbs into a springform pan and use a flat-bottom measuring cup to press crumbs down and up the sides.
3. Melt together your chocolate and butter over a double boiler.
4. Add dark brown sugar, dutch process cocoa powder, salt, and vanilla extract to the melted chocolate mixture.
5. Make sure the mixture is not piping hot, then add three egg yolks and mix.
6. Whip egg whites (meringue) until soft/stiff peaks form.
7. Fold the whipped meringue into the chocolate mixture.
8. Sift over a quarter cup of flour and fold that in.
9. Put the brownie batter into the crust and bake for about 10 minutes, or until a skewer inserted near the edge comes out with moist crumbs.
10. Prepare the chocolate custard by combining chocolate, butter, milk, and four egg yolks over the stove until it thickens like pudding, then strain through a sieve.
11. Spread the custard on top of the cooled brownie cake and press plastic wrap gently into the custard.
12. Whip heavy cream and pile a large amount of whipped cream on top of the pie.
