Honey Brined Southern Fried Chicken Breast

Instructions
1. Make the brine by mixing cold water, salt, and honey. Stir until the salt dissolves completely.
2. Add two boneless skinless chicken breasts to the brine, weigh them down with a plate if needed, cover, and let them brine in the refrigerator for 1 hour.
3. Take the chicken out of the brine, drain, and dry very well with paper towels.
4. Coat the chicken with just enough buttermilk and let it sit at room temperature for 15 minutes.
5. Mix the seasoned flour using garlic and onion salt, black pepper, cayenne, and flour.
6. Dredge the buttermilk-soaked chicken in the seasoned flour, making sure it is totally and extremely well coated.
7. Place the coated chicken on a rack and let it sit out to rest for 15 minutes.
8. Heat vegetable oil to 350 degrees F, add the chicken, and fry on medium heat (keeping oil around 300-310 degrees F) for about 12 to 15 minutes until fully cooked through to an internal temperature of 155 degrees F, turning as needed.
9. Remove the fried chicken from the oil and let it cool for at least 5 minutes before serving.
