Cherry Tomato Pasta

1container Cherry Tomatoes, 2cloves Garlic, 1bunch Basil, 0.5cup Pecorino Cheese, 125g Mascarpone Cheese, 5tbsp Extra Virgin Olive Oil, to taste Salt & Pepper, 200g Casarecce Pasta
Instructions
1. Remove the cherry tomatoes from the vine and cut each cherry tomato in half.
2. On medium heat, pour extra virgin olive oil on the pan, add the cherry tomatoes, and crush the garlic cloves directly into the pan using a garlic crusher. Add a splash of water so the garlic won't burn, and start stirring.
3. Bring a pot of water to a boil, add salt, and cook the pasta for 9 minutes or according to packet instructions.
4. Press the tomatoes in the pan to release their juice and skin. Add salt and pepper.
5. Add half a cup of pasta water to the tomato mix, then break fresh basil leaves by hand and add them to the sauce.
6. Strain the pasta and put it straight into the sauce, mixing well.
7. Add mascarpone cheese and a touch of pasta water, then stir until the mascarpone melts and creates a creamy pink sauce.
8. Turn off the stove, add pecorino cheese and extra basil, drizzle some raw extra virgin olive oil, and mix until creamy and ready to serve.
