Coconut Beef Curry

Ingredients
1portion whole spices, 50g dried coconut, 0.5cup water, 2tbsp sesame oil, 1tsp mustard seeds, 2tbsp ginger and garlic paste, 2medium onions, 1pinch salt, 1portion ground spices, 2medium tomatoes, 500g beef chuck, 2medium potatoes, 400ml coconut milk
Instructions
1. Toast whole spices in a hot pan for about 5 minutes until they darken in color and release aroma. Shake the pan or use a spoon. If spices start burning, add fresh ingredients and lower the heat.
2. Add dried coconut to the pan with the toasted spices and continue toasting briefly. Lower the heat significantly.
3. Transfer toasted spices and coconut to a blender. Add 1/2 cup of water and blend into a smooth paste. Add more water if needed to achieve desired consistency.
4. Heat sesame oil on high for about 30 seconds until it thins out and shimmers.
5. Add mustard seeds to the hot oil and let them sputter for a few seconds.
6. Add ginger and garlic paste. Cook until the raw smell dissipates.
7. Add onions and sauté on medium heat for 5-7 minutes until they change color and become transparent. Add a pinch of salt to help them cook faster.
8. Add ground spices on low heat and cook for about 30 seconds. If sticking to the bottom, add a splash of water.
9. Add tomatoes and cook for 10 minutes until they fully break down and mix with other ingredients. Smash the tomatoes to help them break down quicker. Add water if ingredients are sticking to the pot.
10. Add beef chuck to the pot. Ensure the beef is fully coated with the tomato-onion-spice mix.
11. Add the blended spice paste and water to the pot. Lower the heat and simmer the beef for about 40 minutes, until the liquid reduces by half.
12. Add potatoes and half of the coconut milk. Turn the heat up to high until it starts boiling, then reduce to a simmer. Cover and cook for 20 minutes.
13. Taste the curry and adjust seasoning (e.g., add salt). Check if potatoes are cooked.
14. Add the remaining coconut milk. Bring the heat up to high for a few minutes.
