Scallion Pancakes

10ounces all-purpose flour, 1teaspoon salt, 7ounces warm water, 3tablespoons vegetable oil, 1teaspoon black pepper, 1bunch scallions
Instructions
1. In a bowl, mix all-purpose flour and salt, then gradually add warm water while stirring with chopsticks until it forms a dough.
2. Knead the dough with your hands for about 8 minutes until it comes together.
3. Coat a bowl with oil, turn the dough over in it to coat the surface, cover with plastic film directly touching the dough, and let it rest in the fridge overnight.
4. Make the flower oil (yousu) by mixing all-purpose flour, black pepper, and vegetable oil in a small bowl.
5. Take out the dough, shape it into a long even piece, and cut it into 6 even pieces for 6 pancakes.
6. Roll out a dough piece into a thin rectangular sheet on an oiled mat.
7. Brush the sheet with the flower oil, sprinkle scallions on it, roll it from one side, stretch it slightly, roll it into a cake shape, and tuck the end under the cake.
8. Use a rolling pin to roll the cake into a round sheet about 7 inches across.
9. Pan-fry the scallion pancake in a heated oiled pan on medium heat for 3 to 5 minutes on each side until golden brown.
