Crispy Smoked Paprika Potatoes

2pounds red potatoes, 1whole onion, 4cloves garlic, 2teaspoons smoked paprika, 1cup chicken broth, 0.5teaspoon salt, 3tablespoons olive oil, 1pinch parsley
Instructions
1. Finely chop one onion and add it to a skillet to cook until it softens, about five minutes.
2. Cut two pounds of small red potatoes through the thin side so they are uniform in thickness, then rinse under cold water to remove excess starch.
3. Add four pressed cloves of garlic and one teaspoon of smoked paprika to the softened onions, cooking until fragrant for 20 to 30 seconds.
4. Add the potatoes to the skillet along with one cup of chicken broth and half a teaspoon of salt. Stir and arrange the potatoes cut-side down.
5. Cover with a lid and simmer to steam the potatoes until tender, about 12 to 14 minutes.
6. Remove the lid, increase the heat to medium, and let the liquid reduce.
7. Mix three tablespoons of olive oil with one teaspoon of smoked paprika in a small bowl, then pour into the skillet to crisp the potatoes.
8. Cook the potatoes for another five minutes, flipping them cut-side down until golden brown and super crisp, then toss with parsley before serving.
