Instructions
1. Spread the chicken legs apart and make a small slit in the floppy skin on both sides where the leg meets the body.
2. Pick up the chicken and turn the legs inside out until the leg bones pop out. Ensure you get under the 'oyster' meat.
3. Cut through the joint where the leg bone popped out to separate the leg quarters from the body.
4. Grab a wing, lift it up, and press your knife against the bone, rotating the chicken to separate tendons and meat from the wing to the breast.
5. Bend the wing backwards against its natural joint direction until it pops off.
6. Feel for the joint articulation in the leg quarter and insert your knife to slice through, separating the thigh from the drumstick.
7. To remove the breast, first remove the wishbone. Cut down both sides of the wishbone with the tip of your knife, then pull it out with your finger.
8. Starting from the top, cut down one side of the breast with the tip of your knife, keeping the knife hugging the cartilage with light pressure.
9. Continue cutting until you reach the wing joint where it meets the carcass, then cut in between to separate the breast (with wing joint attached) from the carcass.
