French Onion Green Bean Casserole

2whole onions, some butter, pinch salt, some flour, 2cups cold milk, pinch cayenne pepper, some freshly grated nutmeg, pinch dry thyme, 1pound green beans, 8ounces Gruyere cheese, 1cup breadrumbs, some Parmesan cheese
Instructions
1. Slice up a couple onions with the grain.
2. Heat butter in a large skillet over medium heat, add onions with a pinch of salt, and cook until caramelized.
3. Melt butter in a saucepan over medium heat, add flour, and whisk together. Cook for about 3 minutes.
4. Slowly whisk in cold milk, then season with salt, cayenne pepper, and freshly grated nutmeg. Bring to a simmer on medium heat.
5. Trim green beans by cutting off the ends, then cut them in half.
6. Boil green beans in salted water for about 3 or 4 minutes to take the raw edge off, then drain very well.
7. Assemble the casserole in a 9 by 13 dish with half of the caramelized onions, all drained beans, white sauce, half the Gruyere cheese, remaining onions, buttered breadcrumbs, remaining Gruyere, and a dusting of Parmesan cheese.
8. Bake in a 375 degree oven for about 30 minutes until golden.
