Fresh Peach Cobbler

5ea peaches, 1ea fresh lemon zest, 0.125tsp chinese five spice powder, 1cup white sugar, cup water, 1stick butter, 1cup self-rising flour, 1cup milk
Instructions
1. Prep peaches by cutting around the center, twisting to remove the pit (use freestone peaches), and peeling with a paring knife.
2. Slice the peaches directly over a bowl to catch all the juices.
3. Add fresh lemon zest and chinese five spice powder to the sliced peaches and set aside.
4. Make a simple syrup by combining white sugar and cold water in a pan over medium-high heat. Once dissolved and simmering, add peaches, cook for 2 minutes, then turn off and reserve.
5. Melt a stick of butter in a baking dish over low heat, then turn off the heat.
6. Make the batter by mixing sugar, self-rising flour, and cold milk together until smooth.
7. Pour the batter into the melted butter in the baking dish.
8. Gently place the peaches and syrup on top of the batter without mixing them in.
9. Bake in a preheated 350 degree oven for about 50 minutes until the syrup bubbles vigorously and the crust is browned.
10. Let the cobbler cool for at least 15 minutes before serving.
