1.5pounds ground beef, 6slices American cheese, 0.25cup mayonnaise, 2tablespoons ketchup, 1teaspoon sweet pickle relish, 1teaspoon distilled white vinegar, 1teaspoon sugar, 2teaspoons pepper, 6buns dinner rolls, 1.5teaspoons kosher salt, 1teaspoon vegetable oil, 0.25cup onion, 2tablespoons water
Instructions
1. Portion ground beef into 12 two-ounce balls using a scale.
2. Press each ball of beef into a four-inch wide patty using a zipper lock bag and a glass pie plate.
3. Prepare the burger sauce by mixing mayonnaise, ketchup, sweet pickle relish, distilled white vinegar, sugar, and pepper.
4. Cut slices of American cheese into quarters, and cut dinner rolls in half, spreading burger sauce on the bottom buns.
5. Heat vegetable oil in a 12-inch nonstick skillet over medium heat until it starts to just smoke.
6. Cook half of the patties at a time. Add chopped onion, press into the meat with a spatula, and cook uncovered for about two minutes.
7. Flip the patties, add two pieces of cheese and the bun tops on each, add water to the pan, cover, and steam for 90 seconds.
