Apple Pie Cookies

300g all-purpose flour, 0.25cup granulated sugar, 0.5tsp salt, 1.5tsp ground cinnamon, 1cup unsalted butter, 0.25cup ice water, 3lbs apples, 0.5pc lemon, 1pinch nutmeg, 1cup dark brown sugar, 0.5cup heavy cream, 1tbsp vanilla, 1pc egg, 1tbsp cream for egg wash, 1tbsp sugar for sprinkling
Instructions
1. Add all-purpose flour, granulated sugar, salt, and ground cinnamon into a food processor and pulse to mix.
2. Add cold unsalted butter cut into pieces and pulse until butter is pea-sized.
3. Add ice water gradually while pulsing until the dough comes together.
4. Shape and knead the dough slightly, then wrap in plastic and let it rest in the fridge.
5. Peel, core, and chop the apples into bite-sized pieces.
6. Mix apples with lemon juice, granulated sugar, nutmeg, and cinnamon in a bowl.
7. Melt butter in a pan, add apple mixture, and cook covered on medium-low heat until softened.
8. Make homemade caramel by combining dark brown sugar, heavy cream, and salt in a saucepan, then boiling until thickened and adding vanilla at the end.
9. Strain the cooked apples to separate juices, reduce the juices down in a pan into a rich apple caramel, and mix it back with the apples.
10. Roll out the chilled pie dough on a floured surface and cut out circles using a cookie cutter.
11. Brush dough circles with egg wash, add a dollop of caramel and apple filling, top with lattice dough strips, egg wash, and sprinkle with sugar.
12. Bake in the oven at 350F for 20 to 25 minutes until golden brown.
