Lasagna For Two

1tablespoon olive oil, 1piece small onion, 4ounces ground beef, 4ounces ground pork, 2cloves garlic, 8ounces tomato sauce, 14.5ounces diced tomatoes, 4ounces whole milk ricotta, 0.5cup grated Parmesan, 3tablespoons fresh basil, 1piece egg, to taste salt, to taste pepper, 3pieces no boil noodles, 1cup shredded mozzarella
Instructions
1. Finely chop one small onion.
2. Heat a tablespoon of olive oil in a saucepan over medium heat until shimmering, then add the onion and cook for about five minutes until softened.
3. Add two pressed garlic cloves and sauté for about 30 seconds until fragrant.
4. Add ground beef and ground pork to the pot, cooking for about four minutes until no longer pink, breaking it up with a wooden spoon.
5. Stir in the tomato sauce, drained diced tomatoes, and a quarter cup of tomato juice. Simmer for about two minutes and season with salt and pepper.
6. In a bowl, mix whole milk ricotta, grated Parmesan, chopped fresh basil, one beaten egg, and a bit of salt and pepper.
7. Assemble the lasagna in a loaf pan starting with half a cup of sauce on the bottom, followed by a noodle, a third of the ricotta mixture, quarter cup of mozzarella, and repeat the layers.
8. Cover the loaf pan tightly with greased aluminum foil and bake in a 400 degree oven for 30 minutes, then remove the foil and bake for another 10 minutes to brown the cheese.
9. Let the lasagna rest for at least 20 minutes before slicing and serving.
