Chicken Parmesan

3tablespoons fresh parsley, 4pieces chicken breasts, 2pieces eggs, pinch salt, pinch pepper, 0.33cup flour, 1cup panko breadcrumbs, 0.5cup Parmesan cheese, 0.5cup seasoned Italian breadcrumbs, 1cup olive oil, 2cups marinara sauce, 2cups mozzarella cheese
Instructions
1. Chop fresh parsley and strip the leaves from the stems.
2. Cut the chicken breasts down the middle and give them a quick pound using plastic as a splatter guard.
3. Set up dredging station with three bowls: whisk eggs with salt and pepper in one bowl, flour with salt and pepper in another, and a mixture of panko, seasoned breadcrumbs, Parmesan cheese, and chopped parsley in the third.
4. Preheat oven to 425 degrees.
5. Dredge chicken in flour, dip in egg, and coat thoroughly in the breadcrumb mixture, pressing it down.
6. Heat olive oil in a large pan over medium-high heat and fry the chicken in batches until golden brown on both sides.
7. Place fried chicken onto a baking sheet, top each piece with marinara sauce, a generous sprinkle of shredded mozzarella, and freshly grated Parmesan cheese.
8. Bake in the oven at 425 degrees until the cheese is golden and bubbly.
