Sirloin Steak with Pea Puree and Accompaniments

1piece sirloin steak, 100g fresh peas, 50ml milk, 2piece eggs, 50ml red wine, 30g walnuts, 50g blue cheese, 2piece shallots, 1tbsp beef dripping
Instructions
1. Pour beef dripping into ramekins for Yorkshire puddings and preheat in the oven.
2. Whisk milk and eggs together with a fork to make the Yorkshire pudding batter.
3. Season the steak and sear it in a hot pan with oil and butter.
4. Cut and peel shallots, and toast walnuts in the oven.
5. Start the pea puree by boiling peas and blending them with stock.
6. Deglaze the pan with red wine and reduce down with pan juices for the jus.
7. Plate up the steak, Yorkshire puddings, pea puree, roasted shallots, toasted walnuts, and blue cheese.
