Classic Potato Hash

2pounds potatoes, 1whole onion, 1whole red bell pepper, 4slices bacon, 1tablespoon fresh sage, 4whole eggs, to taste kosher salt, to taste freshly ground pepper, 1tablespoon fresh chives
Instructions
1. Par-cook the potatoes by boiling or using leftover baked potatoes. Peel and chop them into half-inch pieces.
2. Cook the bacon in a skillet until crisp, then remove and chop. Reserve the bacon fat in the skillet.
3. Add chopped onions and red bell pepper to the skillet, sauteing over medium heat until softened and colored.
4. Add the prepared potatoes to the skillet, toss to coat in fat, press into an even layer, and let sit undisturbed to brown.
5. Stir in finely minced fresh sage and the chopped crispy bacon for the final flip.
6. Dig four little divots in the hash, crack an egg into each, cover, and cook over medium low heat until whites are set and yolks are runny.
7. Season with kosher salt, freshly ground pepper, and top with fresh minced chives before serving.
