Penne Alla Vodka

Ingredients
1.5cups onion, 4cloves garlic, 0.25cup olive oil, 1.5teaspoons salt, 1pinch red pepper flakes, 0.5teaspoon black pepper, 1cup vodka, 2tablespoons tomato paste, 28oz whole tomatoes, 1package penne pasta, 0.5cup heavy cream, 0.5cup parmesan cheese
Instructions
1. Dice onions and mince garlic cloves as prep.
2. Heat olive oil in a dutch oven or large pot over medium heat until it shimmers.
3. Add the diced onions, salt, red pepper flakes, and black pepper. Cook down for about 5 minutes while stirring occasionally.
4. Add the minced garlic and cook for about 2 minutes until softened without burning.
5. Pour in the vodka to cook off the alcohol and deglaze the pan.
6. Stir in the tomato paste until dissolved.
7. Add whole tomatoes, breaking them up with your hands for texture.
8. Reduce heat to low and simmer the sauce for 25 to 30 minutes. Add another teaspoon of salt.
9. Cook pasta in boiling salted water. Reserve 1 cup of pasta water before draining.
10. Take sauce off the heat, stir in heavy cream and parmesan cheese until silky.
11. Toss the al dente penne pasta into the sauce, adding reserved pasta water if needed to loosen.
