Minute Steak & Egg with Red Hot Butter Sauce

6oz top sirloin, pinch salt, pinch black pepper, 4tsp bread crumbs, 3tbsp clarified butter, 1large egg, 2tbsp Louisiana hot sauce, 2tsp water, pinch chives
Instructions
1. Prep the top sirloin by cutting the piece in half and slicing each in half to get two 6-ounce portions, or have your butcher do it.
2. Sandwich the steak between two pieces of plastic wrap and pound it out to about 1/4 inch thick.
3. Generously season both sides of the steak with salt, freshly ground black pepper, and fine bread crumbs, then hit it with a meat pounder for a few seconds.
4. Heat a pan over high heat, add clarified butter, and let it get smoking hot before adding the steak.
5. Cook the steak for about 1 to 1.5 minutes per side, reducing the heat slightly after flipping if needed, then transfer to a warm plate and reserve.
6. Let the pan cool for about 30 seconds, add another teaspoon of clarified butter, set heat to medium, and crack one large egg into the pan.
7. Season the egg with a pinch of salt and cook on medium until the edges and bottom are browned and crispy, the white is cooked through, and the yolk is warm and runny.
8. Turn off the heat and place the cooked egg on top of the steak.
9. Make the red hot butter sauce by swirling one chunk of butter, Louisiana hot sauce, and a couple teaspoons of water in the hot pan until emulsified.
10. Spoon the hot sauce over the steak and egg, garnish with chives, and serve.
